Southeast Asian Flavors To Midtown Tampa

Tampa (BLOOM/Brody Wooddell) – Sunda New Asian, a renowned Chicago-founded restaurant, is making its mark in Midtown Tampa, offering a modern and elevated dining experience that celebrates the diverse cultures and cooking traditions of Southeast Asia. Led by founder and owner Billy Dec, Sunda New Asian aims to showcase the avors, presentation, and cooking styles of various Asian countries. With its highly successful locations in Chicago and Nashville, Sunda New Asian’s arrival in Midtown Tampa brings a fresh culinary perspective to the area. Let’s delve into the vision of Billy Dec and the highlights of this exciting new establishment.

A Personal Journey of Culinary Inspiration

Billy Dec, the visionary behind Sunda New Asian, grew up in a Filipino-American household, embarking on journeys through Asian countries en route to visiting his ancestral home. Drawing inspiration from these experiences, Dec crafted a concept that would bring the avors and cooking traditions he encountered to the forefront. Dec’s deep connection to Tampa, where his father’s side of the family resides, adds an element of personal signicance to the opening of Sunda New Asian in Midtown Tampa.

Elevating Asian Cuisine with Flavors and Techniques

Sunda New Asian prides itself on elevating traditional Asian cuisine while maintaining the spirit of its origins. Dec emphasizes the use of quality ingredients, cooking techniques, and talent to create dishes that not only tantalize the taste buds but also captivate visually. The menu boasts an array of standout dishes, including the Spicy Tuna Crispy Rice, The Great White, and Miso Black Cod. The incorporation of diverse avors and textures from various countries provides a comprehensive and enticing culinary experience for guests.

A Culinary Team Cultivating New Asian Cuisine

Dec’s collaboration with Culinary Director Mike Morales, who hails from the Philippines, ensures an authentic representation of Southeast Asian cuisine. Morales, inuenced by cultural elements from Spain, America, Mexico, China, and Malaysia, brings a unique perspective to the culinary creations at Sunda New Asian. With a commitment to evolution and inspiration, the culinary team continues to push boundaries while staying rooted in tradition. The sushi chef, hailing from Japan, contributes a traditional core foundation to the culinary offerings, allowing his cooking to speak for itself.

Choosing Midtown Tampa: A Perfect Fit

When selecting the location for their Florida outpost, Sunda New Asian found Midtown Tampa to be the ideal destination. Dec and his team were drawn to the area’s growth potential and the alignment of values it shares with the Midwest. The developers’ enthusiasm for the Sunda concept, coupled with the vibrant mix of locals, commercial offerings, and hotels, solidied their decision. Midtown Tampa’s 20-acre development provides connectivity and a diverse range of experiences, ensuring that Sunda New Asian becomes a hub for bringing people together.

The Artistic Influence: How Billy Dec’s Creative Background Shapes the Dining Experience

Billy Dec found his earliest outlets for self-expression through acting, hosting, and improvisation. These artistic endeavors not only provided him with an avenue to explore his passion but also instilled in him a deep appreciation for the power of storytelling and captivating an audience.

Dec’s acting and hosting experiences allowed him to connect with people from various walks of life, honing his ability to engage and entertain. Through these encounters, he discovered the importance of creating an immersive and memorable experience, one that extends beyond the stage or screen. He recognized that the combination of captivating storytelling, exceptional service, and visually striking presentations could transport guests to a different world—one where they could truly savor not only the avors but also the atmosphere.

The skills acquired from improvisation, in particular, have profoundly inuenced Dec’s approach to culinary artistry. Improvisation taught him to think on his feet, adapt to unforeseen circumstances, and nd creative solutions. He joked that making a recipe on a tv segment is much easier than doing the real thing in the kitchen. This adaptive mindset has been instrumental in his ability to curate a menu that seamlessly blends tradition and innovation, continuously pushing the boundaries of New Asian cuisine.

Dec’s creative background has fostered a deep understanding of the importance of aesthetics and presentation. Even before the rise of social media platforms like Instagram, Dec recognized that visually appealing dishes not only stimulate the senses but also enhance the overall dining experience. He recalls childhood memories of delicious family meals that were unfortunately met with apprehension due to

their unappealing appearance. This early realization drove Dec to ensure that every dish at Sunda New Asian would be visually beautiful, inviting guests to indulge with their eyes before their taste buds.

Drawing upon his diverse creative experiences, Dec aims to create a dining experience that goes beyond the mere act of eating. By incorporating elements of theater, storytelling, and captivating aesthetics, he seeks to transport guests to a world where tradition and innovation harmoniously coexist. This unique approach not only showcases the rich avors and cooking techniques of Southeast Asia but also ensures that every aspect of the dining experience at Sunda New Asian is an expression of artistry and a feast for the senses.

Billy Dec’s creative background, rooted in acting, hosting, and improvisation, has undoubtedly shaped his vision for Sunda New Asian. By seamlessly blending his artistic talents with culinary expertise, and the best talent, Dec has created a dining experience that is both visually captivating and delectably satisfying, setting Sunda New Asian apart as a truly unique and memorable establishment.Sunda New Asian’s arrival in Midtown Tampa heralds an exciting new chapter in the local dining scene. With Billy Dec at the helm, the restaurant offers a modern Southeast Asian experience that combines traditional avors with elevated techniques and a visually stunning presentation. Florida’s First Sunda New Asian Restaurant Opens At Midtown Tampa Next Week

A new restaurant heading to Midtown Tampa will soon give the Bay area’s many Asian concepts a run for their money.

After a full year of anticipation, Tampa’s Sunda New Asian will celebrate its grand opening on Monday, June 26. Reservations for its opening week can be made on opentable.com. (https://www.opentable.com/restref/client/?restref=1276957&lang=en- US&ot_source=Restaurant%20website&corrid=66e5eced-d68c-4147-b76c-add2fbf4924d)

The new Chicago-based Southeast Asian concept is located at 3648 Midtown Dr., adjacent to other hotspots like Ponte, BellaBrava and True Food Kitchen.

Sunda founder and two-time Emmy-winning actor Billy Dec told Creative Loang Tampa Bay that Tampa’s upcoming location will offer a menu almost identical to that of its Chicago and Nashville restaurants, but with a few Gulf Coast twists.

Pulling avors and techniques from all across the Asian continent, Sunda features a true blend of cuisines, featuring Korean, Japanese, Vietnamese and Thai-inspired dishes like tuna trufe pizza, baked snow crab handrolls, Tom Yum-style grouper, bulgogi roti tacos, lemongrass beef lollipops and oxtail potstickers.

Traditional Pinoy dishes like chicken inasal or BBQ skewers, adobo fried rice and crispy pork pata pay homage to Dec’s Filipino heritage, too. A kamayan feast for four—loaded with lumpia, crispy pork and garlic shrimp—can also be ordered for $180. The Filipino-American actor describes his restaurant as “very personal and emotional”—an attempt to showcase the beauty of his motherland and its unique fare.

If this wide spread of Asian-inspired dishes wasn’t enough—Sunda also boasts a sizable sushi menu complete with specialty rolls, sashimi and nigiri.

An extensive signature cocktail list will also be offered alongside expected soft drinks, beer, wine and sake.

According to its website (https://legacy.sundanewasian.com/tampa/), the restaurant is named after the geographical term Sunda Shelf, “a landmass submerged under shallow seas that was once surrounded by the many different countries and cultures we celebrate at Sunda like Japan, the Philippines, Indonesia, Thailand, China and more.”

Dec says the “New Asian” part of the restaurant’s brand is all about “elevating the level of pride in our culinary technique and culture.”

While our local Sunda will share a menu with its other two locations, Dec tells CL that Tampa’s restaurant—designed by Studio K’s Karen Harold—will boast more of a tropical atmosphere and “vintage Polynesian vibe” due to its proximity to the Gulf.

His decision to open a restaurant in Tampa versus other cities in Florida was above all else, a personal one.

“While one side of my family is from Asia and still mainly lives there, the other side is actually from Tampa. We used to escape the harsh Chicago winter by visiting Florida and I have some really fond memories of the area,” Dec tells CL. “When I visited Tampa a few years ago, I noticed all of these wonderful neighborhoods like Water Street and Hyde Park that I didn’t notice growing up.”

He says Tampa was the ideal location for the next Sunda restaurant due to its balance of tourism, booming residential population and expanding commercial development.

The opening of Tampa’s Sunda was announced last year and it was originally slated to open sometime in 2022.

For the latest information on Sunda’s grand opening, head to its Instagram at @sundanewasian (https://www.instagram.com/sundanewasian/?hl=en).

    After next week’s debut, Tampa’s Sunda will be open from 5 p.m.-10 p.m. Sunday-Thursday and 5 p.m.-11 p.m. Fridays and Saturdays.

Sunda New Asian brings all the flavors of Asia home as one of the latest restaurants to open in Tampa Bay

Sunda New Asian brings all the avors of Asia home as one of the latest restaurants to open in Tampa Bay. Located in Midtown Tampa, Sunda New Asian offers dishes that celebrate the cultures and tastes of Japan, China, Indonesia, Thailand and the Philippines. With the success of his two other locations, in Chicago and Nashville, CEO/Founder Billy Dec, has brought his concept to Tampa. Why Tampa? In addition to being a great place to live and work, Dec has been coming to visit family here for years. Dec has seen the growth and positive changes, and believes Tampa offers a great location for the culinary experience of his restaurant.

On a recent visit, our palette was tantalized by the many dishes we tasted. The freshness of the ingredients and the visual appeal of each dish just left us wanting to return to sample more of the expansive menu. The crafted dishes from Executive Chef Mike Molares showcases the best of Southeast Asian cuisine. The dishes kept coming from mouthwatering appetizers to exquisite main courses and decadent desserts.

If you are a sushi lover, you will certainly appreciate the creative works of art from behind the sushi bar with Head Sushi Chef Ise Masanobu from Tokyo.

The menu offers a variety of dim sum, noodles, salads and rice dishes, to a selection of uniquely prepared seafood, beef, pork and poultry. Many of the dishes are meant to be shared around the table with their sizable portions.

As the dishes owed from the kitchen, we were bought out several dishes that are not on the menu, but that showcases the avors and talent of the kitchen team. We did have the server recommended Crispy Brussels Sprouts and they did not disappoint. The crispy vegetables made with red cabbage, red onions, carrots, chilis, shallots and topped with minced shrimp all in a nuoc cham vinaigrette offered a delicious start. The Oxtail Pot Stickers with braised oxtail, caramelized onion jus and white wasabi cream were delicious pillows of delight.

We also had several dishes from the New Asian Creations on the menu including Escolar “The Great White” — escolar served with trufe vinaigrette, potato chip and topped with black trufe shaving, and Salmon Crudo served in a cilantro, lime vinaigrette.

The offering of Signature Sushi included the Lobster Wagyu that was as decedent as the name. The roll was lled with creamy lobster, wagyu tataki, foie gras aioli, trufe vinaigrette, jalapeño, wasabi aioli.

For a main dish, we tried the Chicken Inasal prepared with lemongrass, tomatoes, red onion, achiote glaze, chili lime vinaigrette, and grilled lemon. We concluded our dinner with the signature dessert “Ridiculous” — vanilla ice cream, ginger carrot cake, glazed walnuts and caramel. It was rich and delicious.

The center bar area provides an impressive list of specialty cocktails, signature sakes, and a collection of popular wines. We sipped on the crafted cocktails of Peared Sake and Grass Tiger. The restaurant’s stylish décor and warm ambiance provide the perfect backdrop for an evening of culinary exploration and socializing.

If you haven’t been to Sunda yet, what are you waiting for? We certainly will be back again soon for more of the savory avors from Southeast Asia.

Fox 13 Tampa Bay: New Restaurant In Tampa’s Midtown Showcases Cuisine From Southeast Asia

TAMPA, Fla. – As Tampa’s (https://www.fox13news.com/tag/us//hillsborough/tampa) Midtown area grows, more cultural experiences are moving into the district. One of those new locations is Sunda New Asian.

“Sunda New Asian is elevated new Asian cuisine (https://www.fox13news.com/tag/lifestyle/food-drink),” shared Billy Dec, owner and founder. “We showcase food from all around Southeast Asia.”

The restaurant features food from Japan, the Philippines, Indonesia, Thailand, China and more from the region, all in one location. “The best part. You get a little taste of everything from Southeast Asia, but do so in a nice elevated way,” said Dec.

But what does that mean to the uninformed foodie? Dec explained, “Things (foods and avors) that are authentically important from Southeast Asia that are elevated in a modern way.”

Their chefs take those dishes, upgrade ingredients and add ourish to the preparation and presentation to recreate the dish for a discerning palate.

“Throughout Southeast Asia, there is so much variety, including amazing vegetarian and vegan (foods) that are naturally popular in that area,” said Dec.

Tampa was a natural choice for Dec’s adventure as he has family here and has always had a connection to the area.

“Well, I think Tampa is an exploding City. Already it was a really diverse city,” he admitted, “We saw an opportunity to bring in lots of avors from Southeast Asia to create a really unique dining experience.”

Sunda New Asian is located at 3648 Midtown Drive in the heart of Midtown.

Crain’s – Billy Dec to open new Sunda in Fulton Market District

The Chicago Restaurant operator is leasing space from Sterling Bay on his quest toward nationwide expansion.

Veteran Chicago restaurant operator Billy Dec is set to open another Sunda New Asian location in the Fulton Market District, marking a major step forward in a nationwide expansion of his restaurant brand.

The new Sunda spot will open next spring or summer at 333 N. Green St. Dec is leasing space from Chicago developer Sterling Bay, which moved its headquarters to the newly built 19-story building less than two years ago. Advertising giant WPP Group, professional services company Ernst & Young, social media app TikTok and others also have space in the building. Sunda’s deal means 333 N. Green is now fully leased.

Sunda is a pan-Asian restaurant that draws inspiration from Dec’s travels across Southeast Asia—his mom is Filipino. The rst location opened in River North in 2009. For Dec, the expansion into the Fulton Market District means the chance to tap into new trends and a different customer base.

“It’s a different renter, it’s a different visitor, it’s a different clientele. To me, it really falls into the expansion package,” he says. “It’s almost as if it’s a totally new environment.”

Like other restaurants in Chicago, Sunda endured months of indoor dining closures. The location also got looted in the unrest during summer 2020, and some of Dec’s family heirlooms were damaged. A burst pipe around Christmas was the icing on top of a year that left Dec feeling like Sunda was on the brink of closure.

“I almost thought it was over,” he said.

Then calls started coming in from landlords who had lost restaurant tenants in their buildings, and Dec decided to move forward with the expansion. He is working to raise $20 million and open at least seven locations across the country. Chicago is rst, and he has also signed a lease in Tampa, Fla. He’s looking at cities such as Dallas, Houston, Denver, Atlanta and Scottsdale, Ariz., as well.

The design of the new Sunda location will be different than the original River North spot, reecting changes in consumer tastes, Dec said.

The bar will be longer, for example. Cocktails play a bigger role in dining out now than they did a dozen years ago, he said. “You weren’t back then thinking about watching your cocktails (being made) and really thinking about all the ingredients and how they interplay with the food.”

People also like to sit at the bar and charge their phone, and pop in for a quicker tasting of small bites. Design elements will also reect trends developed during the pandemic, like open air rooms.

The new Sunda’s menu will still feature some of the River North location’s signature items. Sterling Bay CEO Andy Gloor said in news release that Sunda will be the “perfect addition” to the Fulton Market District’s culinary scene.

Sunda’s Billy Dec Isn’t Done With Chicago

It’s been a few years since restaurant and nightclub owner Billy Dec moved to Nashville, but he hasn’t abandoned his hometown. Dec continues to operate Sunda (https://chicago.eater.com/venue/sunda) New Asian in River North, positioning it as a celebrity magnet, attracting diners (https://chicago.eater.com/maps/best-restaurants-celebrity-sightings-chicago-map) like Jamie Foxx and Barbara Streisand.

But now comes news that Dec will open a second Sunda in the city’s restaurant-laden Fulton Market neighborhood. Dec will serve the same mix of Filipino, Thai, Vietnamese, Korean, and Japanese food at the new location, pegged for a spring or summer debut at 333 N. Green Street, occupying the ground oor space inside the headquarters of prolic Chicago developer Sterling Bay.

Other than Taste of the Philippines in Chicago’s French Market food hall, this will be the West Loop and Fulton Market’s only other restaurant for Filipino food.

Dec says the new opening will mark the next step in his bid for national expansion. Reps aren’t ready to reveal where Sunda may appear next, only divulging that Dec intends to bring the brand to multiple cities across the U.S.

Touching on cuisines from a range of Asian countries, offerings will include hits like garlic crab noodles, spicy tuna crispy rice, and sushi, plus a few new submissions from chef and partner Michael Morales.

Dec, who also operates a Sunda outpost in Nashville, is integrating lessons learned during the pandemic into the 8,400-square-foot space’s design, he told Crain’s (https://www.chicagobusiness.com/restaurants/chicago-restaurant-operator-billy-dec-opening-new-sunda-fulton- market). It’ll include open-air spaces and a longer bar than the rst restaurant, as patrons have shown an increased interest in cocktails and how they’re made, and will allow room for customers looking to stop in for a quick drink or bite.
