Sunda began with a simple yet powerful idea: to honor the flavors, customs, and spirit of Southeast Asia while sharing them in a way that feels welcoming, contemporary, and alive. Rooted in Filipino heritage, our founders and culinary leaders have spent decades immersed in Asian culture and cuisine, learning not just recipes, but the stories and relationships behind them.

From these experiences came the New Asian movement, a commitment to elevating beloved classics through premium ingredients, thoughtful craftsmanship, and an open-hearted approach to hospitality. Menu Philosophy

A Journey Across Southeast Asia

Our menu is a celebration of the diverse culinary traditions found across Japan, China, Thailand, Vietnam, the Philippines, and beyond. From the sushi bar to signature hot dishes, each plate reflects a balance of respect for tradition and passion for innovation.

Hand-rolled maki, handcrafted dim sum, bold noodle dishes, and char-grilled meats are prepared with technique and intention. Every flavor tells a story, from the simplicity of street food staples to the layered depth of regional family recipes.

The journey extends to our beverage program, featuring a progressive sake collection, Asian spirits, Japanese whiskies, classic cocktails with modern twists, and thoughtfully crafted zero-proof offerings.

A Filipino-American entrepreneur raised in Chicago's hospitality world, Billy founded Sunda as a way to honor his heritage and share the rich stories of Asian culture with a wider audience. His vision is rooted in community, celebration, and creating spaces where everyone feels welcome at the table.

Chef Mike has been with Sunda since its beginning, rising from the kitchen of our original River North location to lead the culinary program across all cities. Of Filipino heritage and deeply passionate about Southeast Asian cuisine, he crafts each menu with reverence for tradition and a desire to introduce guests to bold, authentic flavor in modern form.

Together, they continue to shape Sunda's culinary and cultural identity. Driven by pride, purpose, and the power of food to build connection.
